Itlog literally means egg. You may have heard of “itlog na maalat” or “ pritong itlog” which are different preparations of the egg. One is a salted egg, usually duck, while the other is a crispy fried egg. This dish was eaten even before the Spanish colonial era. It is usually seasoned with soy sauce, fish sauce, or vinegar. You can eat itlog by itself, while it is usually mixed with tomatoes or fish.
